I have a bunch of friends doing the Whole 30 right now and while I’m not I’m still trying to come up with lighter recipes. Since my hubby’s taking his lunch to work, he’s been eating a lot of turkey sandwiches and wraps. Not exciting when you eat the same thing every day. Since fresh veggies are in season, I thought I’d mix it up with grilled vegetable wraps.
I love farmer’s markets in the summer. It’s the best place to get fresh, local produce but you’re at the mercy of what’s in season at the moment. I’ve been shopping a lot at Sprouts lately because they have gorgeous organic produce and honestly, it’s priced well (they use it as a loss leader to get you in to buy all the other amazing things that are not cheap). If you have a Sprouts in your market, you’re missing out if you don’t shop there for your fruits, veggies, fish and meats. On Wednesday, they honor two weeks of sale prices so it’s the best day to shop.
For this wrap, I thought I’d try a greek-inspired theme so I picked up some red and yellow peppers, zucchini, spinach and asparagus in the produce section. Popped over to get a tub of hummus and some fresh Feta cheese (which was amazing) and some whole wheat tortillas. I brushed all the veggies except the spinach with olive oil and grilled them on both sides. I like my veggies pretty crunchy so I didn’t leave them on very long. If you like yours well-done, adjust the time.
Next I assembled my wrap. I always start with a spread on the bottom and extend it on the right side all the way to the edge. That way the wrap will stick together and I don’t have to use a toothpick. I’m also careful not to over stuff. You have to be able to pick it up.
If you’re not a fan of some of the veggies, this wrap would also taste great with cucumbers, cherry tomatoes and romaine lettuce. Me? I love all veggies and thought this was great. Hope you do too!
- 1 medium zucchini sliced lengthwise
- 1 red pepper
- 2 asparagus stalks
- Hummus
- Feta Cheese
- Olive Oil
- Whole wheat tortillas
- Prep your veggies and brush them with olive oil.
- Place them on preheated grill until you have grill marks on both sides.
- Spread desired amount of hummus on the tortilla.
- Stack your veggies.
- Top with Feta Cheese and fold tortilla over.
