I love Mexican food (actually, I love anything spicy and full of flavor), but I don’t like all the calories. Usually, I forgo anything crunchy (and of course, cheese-drenched) and eat soft tortillas when we make tacos. However, I’ve solved the calorie problem with this low-fat chicken tostadas recipe.
The majority of the calories when you make tostadas are in the shell because it’s fried. I set out to find a way to make them crunchy, lower in calorie and still taste great. The secret? I sprayed them with Pam and baked them in a 400 degree oven. Now, I have to be honest, you can’t let them sit if you use this method. You have to eat them right away otherwise they taste stale. However, when they’re fresh, they’re amazing.
The other secret to this easy recipe? I made the chicken in the crock pot so it would be tender. I’ve tried to make chicken for tacos and fajitas on the stove top and every time I do, it’s not very tender. In fact, it can turn out tough and rubbery. I threw three large boneless breasts into the slow cooker, covered them with a packet of taco seasoning and added a quarter cup of water. Three hours later they were fork-tender and easy to shred. So simple.
You can make these tostadas with any topping. I chose chicken because everyone in my family likes it and will eat it, but I think they’d be awesome with fish or shrimp as well. Don’t eat meat? Mash some beans with taco seasoning for the base to keep the calories down (refried beans are super fattening) and top with fresh veggies that you love. My suggestions? Mushrooms, red pepper, avocado and zucchini. Set out bowls with your favorite toppings and let your family make their own so it’s fun and everyone’s happy.
- Eight corn tortillas
- Pam spray
- 3 large chicken breasts
- Packet of taco seasoning
- 1/4 cup water
- Shredded lettuce
- Black beans
- Chopped tomato
- Sour cream
- Guacamole
- Salsa
- Place chicken in slow cooker. Top with seasoning.
- Add 1/4 cup of water and cook on high for three hours until done.
- Spray both sides of the corn tortillas with Pam and bake in a 400 degree oven for 10 minutes.
- Top hot tostadas with chicken, black beans and other toppings of your choice.
- Enjoy!
- You can cook the chicken on low for 5-6 hours if you prefer.
