A few months ago, I asked my hubby what the big fuss was about the Moscow Mule. For those of you that don’t know, the K-Man was in the bar and grill business for over twenty years so he knows his cocktails. Once introduced, I discovered it’s the perfect drink for summer because the copper mug keeps it oh so cool. I thought I could do one better since it’s a million degrees here and decided to make Moscow Mule popsicles. Absolutely delicious.
The Moscow Mule was created in 1941 when a bartender at the Cock N’ Bull in Hollywood combined a couple of ingredients that no one wanted- vodka and ginger beer. How did it wind up in a copper mug? By accident. A Russian immigrant brought 2,000 to the U.S. and the bar bought them to make their drink stand out. The drink almost died out during the Cold War because of its name. A little libation trivia for you.
The key to any great drink is high quality liquor. Period. Tito’s Handmade Vodka is my hubby’s favorite. It’s made in Austin in small batches and it’s smooth enough to drink straight (not for me, I’m a vodka and soda gal). It’s the base of our Moscow Mule Popsicles but honestly, you can use any kind of vodka you like (the original one in 1941 was made with Smirnoff).
The popsicles are easy to make. We made the cocktail, poured it in the molds and froze overnight. They’re an awesome adult treat for summer but here’s the catch? You have to lick them fast. Because of the high alcohol content, they melt pretty quickly. I think they’d be perfect for a summer BBQ with friends. Don’t want a frozen treat? No worries. You can make a Moscow Mule, serve it in a copper mug and it will stay cool in the summer heat.
Ingredients
- 1 1/2 ounces of Tito's Vodka
- 4 ounces of Ginger Beer
- One large lime
Instructions
- Add 1 1/2 ounces of vodka to a glass.
- Add four ounces of ginger beer.
- Squeeze two lime wedges into the drink.
- Pour in popsicle mold over two lime circles.
- Freeze overnight.

These were amazing! Ate one Friday for Happy Hour. Problem when it’s hot though. You have to eat them super fast or they melt!
