I love spicy food but I hate chicken tacos when I make them at home so I stick with beef and fish. However, I’ve finally discovered the secret to tender chicken tacos that you can make at home- using the slow cooker. I debated about getting super clever with this recipe- using beer or soda and adding fresh ingredients but then I thought why not try simple first? So, I did. This slow cooker chicken tacos recipe couldn’t be easier.
The secret? I took plain old packaged taco seasoning mix, added a quarter cup of water to the slow cooker and left it alone for five hours on low. Then I came back, let it cool and shredded it in the slow cooker. Had I have known it was going to be a hit, I would’ve taken pictures as I went, but I thought it was going to be a bomb. I was wrong. It’s actually pretty amazing.
The chicken is tender and can not only be used in tacos but it’s perfect for a whole lot of other Mexican recipes. I used in in my Chicken Tostada recipe as well. It’s full of flavor and absolutely delicious.

- Three boneless chicken breasts
- One package of taco seasoning
- 1/4 cup water
- Taco shells and toppings
- Place the chicken breasts in the slow cooker.
- Top with taco seasoning.
- Add water around chicken.
- Cook for 2-3 hours on high or 5 hours on low.
- When finished, let chicken cool slightly then shred in slow cooker with a fork.
