If you paused when you read that title, you did read that right. This is the world’s simplest recipe ever and it’s made in the crock pot. Two ingredient slow cooker pot roast is a definite keeper. You will love it but first, let me tell you how this all came about.
My dad came home with one of those roast kits that have the spices and all the veggies. The next day when I went to throw it in the slow cooker, the veggies were mushy. I didn’t have anything else thawed out for dinner and I didn’t feel like going to the store, so I started scouring my kitchen for ingredients.
I didn’t have any of the standard stuff. No carrots, celery or even onions in the house. I also didn’t have any canned cream of mushroom soup which is my slow cooker stand by when I can’t figure out what to do. I did have a bottle of coke from Rosie’s Easter basket and some Lipton soup mix. So, I threw the roast in the crock pot. Sprinkled the soup mix on top and the coke around the roast and turned it on slow for eight hours.
The result? It was amazing. It was tender, juicy and full of flavor. We were all shocked.
This is definitely an easy meal that’s pretty healthy. I paired it with my Gorgonzola Mashed Potatoes and some green beans. Super simple. You’re going to want to add this to your list!
