So, the other day, I’m at the grocery store when I spy Pumpkin Spice Oreos on the shelf. I knew immediately that I not only had to try them, I needed to make some kind of recipe. Fall Chocolate Bark is the result and it’s totally delicious!
First, I broke my Oreos into quarters. Usually when you do this the filling stays put, however, my Pumpkin Spice Oreos were incredibly fresh so I had to be careful that the filling stayed intact. I also may or may not have tried one of the cookies while I did this.
Next, I poured a twelve ounce bag of semi-sweet chocolate chips into a microwaveable bowl. I chose semi-sweet because the candy corn and Oreos are both really sweet and I wanted the contrast. I set the microwave to 50% so I wouldn’t accidentally burn the chocolate, and started to melt it in one minute increments, stirring in-between. If you don’t like to use your microwave when you cook, you can use a double boiler to melt your chocolate.
Once the chocolate was melted, I spread it on a baking sheet lined with wax paper. You have to do this pretty quickly as the chocolate wants to harden quickly (and remember, it also wants to melt quickly when you handle it in the next step. I had a little chocolate on my hands and face when we were done). Next, I grabbed my teen for the fun part- putting all the goodies in the bark.
Because we didn’t want to cover up the Oreos, we placed everything by hand. Rosie scattered candy corn and Reece’s Pieces in-between the Oreos. Then she topped it all with sprinkles. We placed it in the refrigerator for 30 minutes and it was finished. Carefully beak into pieces. So simple and this is something you can make it with a little one too once the chocolate is melted.
