I love ham. Unfortunately, there’s always a lot of leftovers and I’ve learned over the years that when we save the bone for a soup, it never gets made. We love Ham and Potato Casserole, but it’s not very light on calories and it’s not a fast meal. This Ham, Brie and Apple Grilled Cheese is a perfect way to use leftover holiday ham and make a fast meal.
There are so many different kinds of apples. I made this grilled cheese with Gala apples because that’s what I had on hand. Gala’s are sweet and extremely versatile. They’re perfect in salads, pies and yes, a grilled cheese sandwich. If you prefer a tart apple, this sandwich would be great with Granny Smith apples (and if you do that you may want to sub cheddar for the brie cheese).
If you’ve ever cooked with brie, you know it can get really runny (that’s why it’s perfect to just melt and eat on apples). The secret to making this sandwich is to not flip it and grill it on both sides. I assembled the ham, apple and brie and grilled the bread on the bottom, then grilled the bread for the top separately. It was just enough heat to soften the brie for the sandwich, but not too much to have it running all over the place.
The result? This is a great tasting sandwich and a good way to get rid of some of that ham. I think you’ll love it!
The perfect Ham, Brie and Apple Grilled Cheese
- 2 slices sourdough bread
- 2 slices ham
- 1 small Gala apple sliced
- Brie cheese
- Spread the butter on the bread.
- Heat the ham on both sides in the pan
- Place first slice of bread in pan.
- Top with ham, apples and brie.
- Grill the other slice of bread.
- Assemble sandwich and eat!
