Ever since Rosie had a feeding tube, eating has been a bit of a struggle. When you haven’t been able to eat for a few months, your tummy isn’t used to real food so you not only have to go slow, you have to eat smart. One of the things we learned quickly, is that breakfast is always an easy to eat meal. So, I focus a lot of my energy around healthy well balanced breakfast or incorporating breakfast food into regular meals but that gets boring.
Last week, I was at my local Hy-Vee when I stumbled across a new cereal that I thought my teen would love. Honey Maid S’mores gives you the taste of s’mores right in your cereal bowl with chocolatey goodness, sweet marshmallows and the delicious taste of HONEY MAID® Graham Crackers. I have to confess, the minute I got home, I stuck my hand right in the box to try it out and it is FABULOUS!! It doesn’t even need milk (however if you check out my cart, I did try to make it part of a healthy breakfast).
Lately, my teen has been into protein balls because they’re an easy way to get some quick energy. Since I love s’mores made with peanut butter cups, I knew immediately that Honey Maid S’mores would make a great high protein snack! I set out to come up with a recipe that my teen would love for some quick nutrition that’s also a treat.
If you look at protein ball recipes, most of them use peanut butter for a base, however, if you have a peanut allergy, this doesn’t work. I’m a big believer that you can sub almond butter in any recipe and while it alters the flavor a little, it’s still great. I also think you can increase the amount of protein in any recipe by adding some protein powder. I didn’t in this one but adding a half cup of plant based protein to the recipe would work. Honestly, the flavor of the cereal is so amazing, you could probably toss just about anything into the mix and it would turn out great.
- 1 cup peanut butter
- 1/4 cup honey
- 1/2 tsp vanilla
- 1 cup oats
- 1 cup Honey Maid S'mores cereal
- Add the peanut butter, honey and vanilla together in a bowl. Mix well.
- Add the oats to a bowl.
- Fold the peanut butter mixture into the oats.
- Fold the Honey Maid S'mores cereal into the oat mixture.
- Roll into teaspoon sized balls and chill in the refrigerator
