Seafood Stuffed Baby Bellas are a perfect appetizer for a weekend dinner or dinner party. I am a big fan of spinach stuffed mushrooms so I asked my hubby to create something a little different. He created this recipe and then I messed with it a little when I cooked. Why? His original idea to dredge the mushroom in an egg wash (that’s why you see an egg in my original ingredients) and breadcrumbs wasn’t going to work out. That’s what I love about cooking. You have to be a little flexible.
I chose to make this with Baby Bellas because I love them. They’re a little heartier than button mushrooms and have more of a meaty taste. I thought they’d be the perfect compliment to the seafood. To save money, I used Krab instead of fresh crab meat but honestly, it took such a small amount that these could have been made with one crab leg inexpensively. Also, because I cut both the Krab and shrimp to make them smaller buy whatever size shrimp is on sale. It won’t matter.
As you can see, I overshot on the filling and had a bunch leftover. Since it had so many goodies in it, I didn’t want to waste it so you know what I did? I put it on some rolls and browned the top in the oven. If you’re going to serve this for a party, I recommend using baguette bread so it’s a little prettier but it tasted amazing! If you like a crab melt, I’d make the filling and just have it for a sandwich, it was that good.
Not planning to have a dinner party any time soon? No biggie. Make these and serve them for dinner with a salad. It’s a great light dinner!

My husband and I tried sausage stuffed baby bellas the other night and they were not so great. I told him we should have made our own recipe instead of buying them already made. These look amazing, way better than the ones we had!

Because portobello mushrooms taste meaty already, I’m not sure I’d like them with sausage either. You should try this recipe!

I absolutely LOVE stuffed mushrooms! So yummy! We typically get baby bellas here because they do seem a bit heartier. I love to roast them with root veggies, but stuffed mushrooms definitely sound delectable right about now!
