If you’re looking for a brunch idea that will wow your guests or just a Saturday breakfast that tastes great, this Southwest Breakfast Skillet is for you. Loaded with potatoes, eggs, cheese, pico de gallo and guacamole, it’s not low on calories. It’s big on taste.
Once again, I have a confession to make. This recipe idea came out of a whole bunch of leftovers in my fridge. For the Breakfast Sushi recipe, I made the entire package of sausage and froze the leftovers so I pulled that out of the freezer. The night before, I baked extra potatoes so I could slice them and fry them the next day. And, the southwestern accompaniments? We had Slow Cooker Chicken Tacos earlier in the week, so I used all the leftover toppings for this recipe. Who says cooking needs to be hard?
I’ve posted before that the secret to crispy pan-fried potatoes is baking them first. Once cold, all you have to do is slice them and fry them in canola oil until done. They turn out perfect every single time. The secret to great scrambled eggs? I use a tablespoon of mayonnaise for three eggs and blend well. I also cook them slowly in a preheated buttered pan so they stay moist. I hate rubbery, overcooked eggs but if you cook them slowly, they are always amazing.
Once everything was done, I layered the potatoes on the skillet first. Topped with the eggs and cheese, added the sausage links and the toppings and served. It tasted amazing and was so easy to make.

- One medium baked potato
- Three eggs
- 1 tbs mayonnaise
- 1 tbs butter
- 1/4 cup cheddar cheese
- 2 sausage links
- Pico de gallo
- 1 dollop sour cream
- 1 dollop guacamole
- Cover the bottom of a small frying pan with oil and preheat on medium.
- Slice your baked potato.
- Place slices in pan and fry until done flipping once.
- Blend your eggs and mayonnaise well.
- Preheat small frying pan on medium low with butter.
- Scramble your eggs until just firm.
- Microwave the sausage to heat.
- Assemble potatoes on skillet, top with eggs, cheese and toppings.
