After weeks of rain, summer’s here in Kansas City. My favorite thing about the season? Being more active and sharing fun times with friends. I invited some of my BFF’s over for a walk. We have a gorgeous park with a hiking trail at the end of our street the perfect setting to unwind after a day of work. After we planned to have dinner, I chose a SPLENDA® Brand SWEET SWAPS recipe. Since Copper River Salmon is in season, I had it marinate while we headed to the park.
My friends are real troopers. Since we’ve had a lot of rain lately, the temperatures have been pretty mild. However, this night it was in the upper 90’s. Our trail is a half-mile long with exercise stations set up along the route. While we weren’t ambitious enough to do pull-ups, we enjoyed the trail and all the scenery. Especially the deck and pond at the end. Then we walked back to my home to have dinner- much of which I prepped before we left.

Since it was 95 degrees out and I didn’t want to stand outside at the grill because I’m a wimp, I chose to wrap it in foil and bake in the oven for 15 minutes at 400 degrees.
The result? The salmon turned out perfect and it was absolutely delicious. Served with a spinach salad topped with walnuts, raspberries and feta cheese, it was a very tasty light dinner after a hot walk. I love simple recipes that can be part of a balanced lifestyle and my girlfriends do too. Everyone loved this delicious summer dinner. In fact, my friends were raving about it the next day.
