This week, I cooked absolutely nothing. Rosie was in the hospital at the start of the week and all my friends banded together to drop off meals (it was my own personal meal plan). We had such a wide variety of dinners too. What a blessing.
If you have a busy week coming up, you’ll definitely want to make my Slow Cooker Chicken Tacos that are featured this week. All it takes is a couple of ingredients then you throw it in the slow cooker (or if you have a pressure cooker you can make it in under an hour). So simple and your entire family will love it.

This week, we have meals delivered twice, so I’m going to have to get back in the game and cook. I’m thinking that the tortilla soup featured this week would be amazing and we could eat it for a couple of days. Anything that I can make now that’s fast and easy fits right into our lifestyle. I’m also thinking that the Chicken Gyro looks delicious. Maybe we’ll add that too.
I also need to get back in my kitchen and create a recipe this week for the blog. If you missed my recipe from last week, you need to check it out. These Seafood Stuffed Baby Bellas were amazing and while it’s not really a week-night meal, it’s perfect for the weekend.
