I’ve never had to pack my hubby’s lunch. He’s always worked in the restaurant business and he’s ordered his lunch from the kitchen there every day. However, now that he’s not, I’m in charge of coming up with creative ideas every day. Guess what? There aren’t that many. I’ve experimented with all kinds of sandwiches and wraps and I’ve made a bunch of different pasta salads but last week I tried something different- good old fashioned macaroni salad.
I’m not a mayo lover but my hubby is so this is right up his alley. I also don’t like the macaroni salad that you buy at the grocery store because it’s boring so I set out to improve the recipe (in full disclosure, my husband confessed that he loves the plain old boring crap, so I’m just going to buy a container every once in a while at Aldi for $2.50). I also wanted to lower the calories (probably why he didn’t like it as much as the fatty store variety).
The result? I thought it was great. So what if my hubby liked the store version better? Honestly, what makes our marriage work is we don’t have to like the same things all the time or agree. (Those of you that know us well are probably laughing right now because we are pretty different people). I think you will love this salad too.
You’ll enjoy this Macaroni Salad!
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 3 tbs. sour cream
- 2 tbs. apple cider vinegar
- 1 tbs. lemon pepper seasoning
- 1 tsp. sugar
- 2 celery ribs, chopped
- 1 red pepper, chopped
- 1 tomato, chopped
- Cook the macaroni according to package directions and drain.
- Add the mayo, sour cream, vinegar, lemon pepper and sugar and mix.
- Fold in the chopped vegetables and serve.

This looks delicious! I love simple salads to have at lunch. While I don’t have to pack a lunch for my husband, he works from home…so I’m always trying to think of ideas for what to make for lunch. This will be perfect!
